Simple Vegetables Cream Soup Recipe
Simple vegetables cream soup may be served as a side dish, as an appetizer or even as a main course. Such soup can be made rather quickly and if some meat or fish is added, it can be rather satiating meal.
Recipe is very simple.
Using sharp knife and kitchen cutting board, peal off, clean and cut the vegetables and put it into the plastic bowl.
Broad range of vegetables is suitable for soups like this one: potatoes, pumpkin, onions, garlic, carrot, peas, even some spinach, broccoli, cauliflower and similar.
Simply, use what you have ...
Put cold water in suitable pot, add vegetables, some salt, pepper, perhaps a laurel leaf and let it boil for 15-20 minutes.
If you intend to add some meat, add it now - it will be blended later with the vegetables.
Turkey and chicken are great for such 'light' soups - turkey and chicken breasts are rich in protein, low in fats and add rather gentle flavor ...
After boiling for some 15-20 minutes, blend everything using small hand blender - this can be done even while meat and vegetable are cooking (if your hand blender is intended for such use).
If you are blending meat and vegetable mix in separate pot, don't throw away the boiling water - after blending, put the meat and vegetables in the same water (it contains so much vitamins, minerals, flavors ...).
Now, let the meat (if present) and vegetable boil for 15-20 minutes more (depending on the soup content).
From time to time, mix gently everything and add some water if necessary.
Cream vegetable soup can be served in almost any occasion or season and can be made using fresh or frozen vegetables.
Note: if you are adding fish, be sure that there are no bones in the meat. Personally, I like fish, but prefer adding turkey or chicken breast meat to soups like this one ...
